The Great Food Blogger Cookie Swap:2013

This year was my first year doing Food Blogger Cookie Swap, and I loved it :D I am defiantly going to take part in this swap next year, and I am already planning :D If you missed the cookie swap this year, sign up here, http://eepurl.com/qCABj to get email notifications for next years swap!!

Sending a new cookie recipe and receiving three other cookie recipes from three different bloggers was such a treat. I had sent out two cookie recipes to my secret bloggers. I had tried a peppermint pinwheel, and white chocolate chip pretzel cookies.



The Peppermint Pinwheel cookies was like a sugar cookie dough but the red in the pinwheel had a peppermint taste to it, while the white had a vanilla taste to it.


Peppermint Pinwheel Cookies:
1/2 cup butter, soften
1 cup sugar
1 egg
1/4 tsp vanilla extract
1/4 tsp mint extract
1 3/4 cup flour
1/2 tsp baking soda
1/4 tsp salt
3/4 tsp reed food coloring
 
1. Beat butter until creamy; slowly add sugar beating until light and fluffy

2. Add egg and ; beat until blended, scrape bowl as needed
3. Combine flour, baking soda, and salt, slowly add flour mixture to butter; beat on slow until blended
4. Divide dough into 2 equal parts; add vanilla to one part, and the mint extract to the other part; roll one portion of dough onto a 12x18 rectangle on a piece of lightly floured plastic wrap
5. Knead food coloring paste into other portion of dough.  Roll out dough onto a rectangle, invert noncolor dough onto of colored dough. Peel off top piece of plastic wrap. Cut dough in half lengthwise forming two rectangles. Roll up each rectangle jelly roll fashion starting at one long side using bottom piece of plastic wrap as a guide, freeze for 4 hours.
6. Preheat oven to 350 degrees for 6-7 minutes or until puffed; cool cookies on baking sheet for 5 minutes remove to wire racks and cool completely.


I also did a white chocolate pretzel cookie, which consisted of white chocolate chips, and chocolate and white crushed pretzels.

 
White Chocolate Chip Pretzel Cookies
3/4 cup butter
3/4 cup sugar
3/4 cup packed dark brown sugar
2 eggs
1 1/2 teaspoon vanilla extract
2 1/4 + 2 tbs all purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
3 cup semi sweet chocolate chips
1 bag (7 oz) white and chocolate covered pretzels
 
Oven 350 degrees
1. In a large bowl beat butter, and sugars; mix on medium speed until creamy
2. Add eggs and vanilla beat until blended
3. Mix four, baking soda, and salt; add to butter mixture until blended
4. Stir in chocolate chips
 
Bake for 10-14 minutes
